炸醬麵 Zha Jiang Mian

The Shanghainese version. It’s a personal favorite of mine, as well as all four of my big sisters.

Stir fry: ground pork, onion, ginger, garlic, (potatoes, carrots)

Sauce: 甜麵醬 sweet flour sauce, 豆瓣醬 chili bean paste, dark soy sauce, shaoxing wine, sugar

When the sauce is fully mixed into the stir fry, add enough water to cover it. Let it simmer for 10mins. Add a corn starch slurry and simmer it for another 10mins until sauce thickens.

Cook noodles of choice.

Garnish with cucumber and scallions.

** If you add potatoes and/or carrots, chop them into tiny pieces because they will become extra salty from the sauce compared to everything else.
