Happy Holidays to you all! Me here is extremely sick- sore throat, runny nose, headache, and fever- you name it. I’m not even in the mood to eat anything besides Chinese congee, but my sweet tooth is obviously still alive haha. I was very insistent on baking cookies, in particular, because I bought a cookie dough scoop last night and was eager to use it! So after many modifications to this recipe, glad (and surprised) that it all worked out. -Healthier than your average cookie-
6 tbsp unsalted butter
3/4 cup light brown sugar
1-1/2 cup oats
1/3 cup all purpose flour
1/3 cup whole wheat flour / coconut flour
3/4 tsp baking soda
1/2 tsp salt
1 tbsp vanilla extract
1 cup diced dates (6 dates)
1-1/2 handful dark chocolate chips
1. In a large bowl, microwave butter for ~2mins, until melted. Stir in brown sugar.
2. In a medium sized bowl, combine oats, flours, baking soda, and salt. Mix this dry mixture into the wet mixture. Stir in egg, vanilla, dates, and chocolate one at a time.
Bake: 350F, Prep: 20mins, Time: 12mins, Serves: 28 cookies
If the dough looks too dry to you, add a dash of milk and/or a small scoop of yogurt. (I used a combination and the yogurt was blueberry flavored).
