First time eating and making quinoa~ All I can say is that this was so refreshingly delicious!
(Canned Sliced Ripe) Olives
(extra virgin) olive oil
(shredded) mozzarella cheese
- Rinse and drain quinoa. In a pot, add quinoa and double the amount of water to quinoa. When water starts to boil, lower heat to simmer for 15 mins.
- Rinse and drain olives. Chop cucumbers, tomatoes (spoon out “liquidy” part), and onion into small pieces.
- In a bowl, mix all ingredients together. (Serve cold).
