Mediterranean Quinoa Salad

First time eating and making quinoa~ All I can say is that this was so refreshingly delicious!

Ingredients

Quinoa
(Canned Sliced Ripe) Olives
cucumber
tomato
red onion
lemon
salt
black pepper
(extra virgin) olive oil
(shredded) mozzarella cheese

Directions

  1. Rinse and drain quinoa. In a pot, add quinoa and double the amount of water to quinoa. When water starts to boil, lower heat to simmer for 15 mins.
  2. Rinse and drain olives. Chop cucumbers, tomatoes (spoon out “liquidy” part), and onion into small pieces.
  3. In a bowl, mix all ingredients together. (Serve cold).

Total Time: 35 mins
